I am just trying to figure out why some touring cars have one rear window on the top and some have the multiple windows. The car I have has one, and looks to be very original. What determines which one the car should have?

I see no one has answered your question. The first DBs had 4 cathedral windows, then 6 cathedrals until 1920, I think. 1921 they went to one rear window. Was your top was replaced at some time?

The top has been replaced, but the frame looks to be original. I have seen another original 19 that has the single window. I have also seen ones with the cathedral ones. Possible both were used?

The book The Dodge Story claims 1921 as the changeover year from cathedral to a single glass window. But there were several aftermarket companies that sold single pane windows from about 1915 on to replace the cathedrals.
